Lanzhou, abbreviated as "Lan" or "Gao", was called Jincheng in ancient times. It is the provincial capital and political, cultural, economic, and scientific and educational center of Gansu Province, and an important central city in the western region. It is the provincial capital of Gansu Province approved by the State Council and an important industrial base in the Northwest region. Comprehensive transportation hub, one of the important central cities in the western region, and an important node city in the Silk Road Economic Belt. As of July 2020, the city has jurisdiction over 5 districts, 3 counties, and 3 national-level development zones, with a total area of 13,100 square kilometers and a permanent population of 4.134 million. Lanzhou is located in northwestern China, the geometric center of the continental territory of China, and the central part of Gansu Province. It is a strategic platform for the country to open to the west, an important engine for the development of the western region, a scientific development demonstration area in the northwest, and a historical city of the Yellow River. , A modern central city with international influence in the western region, a modern and international metropolis facing the "One Belt One Road" and radiating Central Asia, West Asia and South Asia. Lanzhou has a history of more than 2,200 years since it was established as a county in the Qin Dynasty. Authentic Lanzhou Lamian, alkaline hand pulled noodles: The Mount Everest of Chinese cooking. Teaching you how to make Lanzhou-style Lamian is a bit awkward. See… it’s less of a recipe, and more of a skill. It’d be like teaching you a language – I can introduce the stuff you need to know, but you won’t be fluent after your first class. And that’s ok. As such, there’s been a relative dearth of good information out there *in Chinese* on this noodle, let alone in English. So we felt like this would be a good video to clear the air a bit. Written recipe is over here on /r/cooking - apologies for the delay, there was some... feature creep: 🤍 -250g Pizza flour -120g Ice Water mixed with ½ tsp salt -Any dense oil for rubbing. Olive would work great. We used about ~3 tbsp through the whole process -10g water mixed with 2g Penghui Homemade Penghui: 100g salt, 90g sodium carbonate, 8g sodium triphosphate, 2.5g (3/4tsp) sodium metabisulfite. Remember the fundamental kneading technique - the ‘making the abacus string’: Press everything flat by first punching it down with all your force, then twisting and doing the ‘hand cross’ flattening motion. Then curl up the dough about an inch or so, move down the dough, and repeat that once or twice (depending on the size of your dough) to get a long string. The fold that in half, and optionally fold again if it’s still a little too long. Repeat. Besides that, Lamian is simply a matter of: - Do the cat claw to incorporate the flour. Quick knead - Optional but recommended rest - Make your abacus string. This will likely take 30-40 minutes and suck - Add the Penghui. Do either the 3fold2box technique or the abacus string, up to you - Comb your gluten. Do the twist if you want to look cool and impress your friends. Do the folding if you want to follow us. 5-6 folds is good to pull - Pull the noodles. Five times for ‘normal thin’, six for ‘hair thin’ So easy lah If you’re curious about where to buy some of this stuff… The Penghui is available through agents, but you need to buy a stupid amount of it: 🤍 The sodium triphosphate: 🤍 The sodium metabisulfite: 🤍 And if you don’t feel like pounding salt, some powdered sodium chloride: 🤍 As always, huge thank you to Trevor James a.k.a. the Food Ranger for continuing to allow us to raid his backlog for b-roll haha. Famous Lanzhou Beef Noodles Recipe. I visited the Noodle Arts Restaurant. This restaurant has been compared to Michelin star quality. Their recipe includes handmade noodles and homemade spicy chili oil. The owner shared some of their secrets to making their famous soup. Noodles are one of my favorite foods and this soup ranks up with the best. My version of this delicious soup is below. Recipe FAMOUS LANZHOU BEEF NOODLE SOUP 1 beef shank (or use other cut of beef) 3 to 4 handful noodles (1 handful noodles per serving) 1 stalk leek 1 daikon radish cut in chunks 1 jar of chili oil To make soup stock: Put beef shank into boiling water. Boil for 5 to 10 minutes. Rinse off beef shank in cold water and set aside. Put chicken bones and pork bones in a pot. Add 2 pieces of ginger. Add 8 to 10 cups water. Simmer broth for 1 hour or more. Remove all bones. Add salt. This is your soup stock. You can use all beef bones for this soup stock if you like. Put beef shank into soup stock. Add more ginger, cinnamon stick, cardamon. Add daikon radish chunks. Simmer soup broth for 1 hour. Skim off any fat from the surface. In a separate pot, bring water to a boil. Add noodles and cook according to instructions. Authentic Lanzhou noodles are made of wheat flour. You can use other kinds of noodles if you like. Serving noodles: Put each serving of noodles in a large bowl. Put some sliced beef on top of the noodles. Next to the beef, put some chopped leeks. Add soup broth to cover noodles. Put 2 to 3 tablespoons chili oil in an open section of the soup.
